The Castle Brewery in Stockton were ; in common with a few other breweries outside the centre of british brewing in the 19 Th Century ( Burton on Trent) using Burton Unions to ferment their beers .
The beers as brewed in 1899 as above are , slightly odd in that they have NO Adjuncts in the brewing ledger ; yet a year later in 1900 , there is specific mention of Flaked Rice and Maize in Specific weight values (where required for each grist) .
Was there a change in brewing staff in Stockton at the end of the 19 Th Century ; or was a brewer from North Eastern Breweries other production site in Burton On Trent sent up to County Durham ? .
I`ll be posting a table for the 1900 Vaux / North Eastern Breweries beers soon , and possibly a recipie or two !!

A VERY BIG THANKS to Eric from the Jim`s Beer Kit Forum who kindly took the time to go up to the Records Office in Durham to photograph a few pages of the records for me , CHEERS Eric !!.

(The Burton Union system of fermentation was,  invented by Peter Walker , a Scottish brewer who had widespread interests in the North West and Midlands from the 1840`s until his death in the late 1870`s) .
